Peach tiramisu

 




Ingredients

For 4 to 6 servings:


250g mascarpone


3 eggs


80g brown sugar


1 glass of water + 30g sugar


4 to 6 peaches (yellow) depending on size (***)


Ladyfinger biscuits (15 to 20, depending on the size of your dish)


(Optional) 1 splash of Amaretto



Instructions


Step 1: Prepare the peaches and syrup

In a saucepan, combine water, 30g of sugar, and Amaretto. Bring to a boil.

Submerge the peaches (washed beforehand) into the boiling syrup for 30 seconds. Let them cool for a few seconds, then peel them and place them back in the syrup (**). Once all peaches are blanched, remove the syrup from the heat and allow it to infuse for as long as possible.

Cut the peaches into small cubes and set them aside in a bowl.


Step 2: Prepare the mascarpone cream

Separate the egg whites from the yolks. Whisk the yolks with the brown sugar until the mixture becomes pale.

Add the mascarpone to the yolk-sugar mixture and whisk until smooth.

Whisk the egg whites into stiff peaks. Gently fold the egg whites into the mascarpone mixture, creating a smooth cream.


Step 3: Assembling the tiramisu

In a flat dish, place a layer of ladyfingers. Soak the biscuits in the syrup, making sure they are wet but not soaked through (no juice pooling in the dish) (see tip 1).

Top with half of the mascarpone cream.

Add 2/3 of the peach cubes.

Place another layer of soaked ladyfingers.

Spread the remaining mascarpone cream on top and smooth it out.

Decorate with the remaining peach cubes.

Refrigerate the tiramisu for at least 4 hours before serving, and serve very cold.


Tips

(1) There are several ways to soak the ladyfingers: dip them directly into the syrup, brush them with a pastry brush, or spoon the syrup over the biscuits. Choose your preferred method.

Which peaches to use? I prefer yellow peaches as they are more flavorful, but feel free to adapt based on your preferences.

Out of season? You can use canned peaches in syrup. Use the syrup from the can to soak the biscuits.

For serving: You can either serve the tiramisu in a large family-style dish (suc

h as a baking dish) or in individual cups.
