Ingredients :
310 ml (1 ¼ cups) of sugar
30 ml (2 tbsp) of potato starch (see note)
600 g of frozen sliced strawberries, slightly thawed (about 1 liter / 4 cups)
1 egg, lightly beaten
30 ml (2 tbsp) of water
Préparation :

Place the oven rack in the lower position and preheat the oven to 200°C (400°F).
In a large bowl, mix the sugar and cornstarch, then add the strawberries and stir well.
In a small bowl, beat the egg with water to prepare the egg wash, then set aside.
Roll out one piece of dough and place it in a 23 cm (9 in) pie dish. Add the filling, then brush the edges of the dough with the egg wash. Cover with the second piece of dough, make a small incision in the center to allow steam to escape, and trim any excess dough. Seal the edges well by pressing them with a fork or your fingers. Brush the top with the egg wash.
Bake in the oven for about 50 minutes, or until the crust is golden brown. Let cool on a wire rack, then serve warm or cold.
